This recipe makes: 70 eclairs.
temperature: 180-190°
Water 2/3 cup
Oil/butter 2/3 cup
Pinch salt
Flour 1 cup
5 Eggs
2. Now add one cup flour and carefully mix quickly as fast as you can(if you don’t mix quickly and continuously lumps will start forming). A paste kind of thick mixture should start forming.

(When you get this kind of mixture close the stove and let the mixture cool for 3-4 minutes).
3. When the mixture is a bit cool add Eggs in it one by one and mix. (Add all the 5 eggs one by one ).

4. Now oil a pan and pipe the batter on the pan using a piping bag or plastic bag . (You could shape them into circles, long rectangles etc.)

5. Now bake them on the above mentioned temperature. ( NOTE DO NOT OPEN THE OVEN DOOR AT ALL ONCE YOU PUT THE ECLAIRS IN TO BAKE OR ELSE THEY WON’T BE HOLLOW FROM INSIDE).
6. Bake them for 10-15 minutes. (Keep an eye on them through the window)
7. When they are golden brown take take them out. Just like this one:

8. Cut them from the middle and fill them with cream or custard i filled them with strawberry custard.

9. Now drizzle chocolate on top and enjoy chilled.

Enjoy…….:)
